Grilled Peach and Prosciutto Salad

Grilled Peach  and Prosciutto Salad



Ingredients for salad
1 T. Olive oil
1/2 t. salt
1/2 t. sugar
12 strips of Parmigiano-Reggiano cheese, cut into strips
1 pkg. Prosciutto ham sliced into 1 inch wide strips
2 T. chopped pecans
Pepper to taste
2 peaches,  not peeled and sliced into at least 6 to 8 wedges
1 T. Balsamic Glaze for garnish, dot around plate upon completion
Spinach leaves or Arugula for garnish

Toast the pecans, chop and set aside. Toss the peaches in a small plastic bag with oil, sugar,salt and pepper until the peaches are well covered with mixture. Grill until all the peaches get that grilled mark~then chill.
Try to create a tripod with the cheese slices, think of a triangle standing on its side, so the Prosciutto looks draped over the cheese strips. (You are creating a mound to place all the ham on) Drape the ham on the cheese. Sprinkle with the pecans and now add the peaches around the base of the cheese and ham mound. Use your mister if you have one to apply a quick coating of oil on the salad and add a few dollops of glaze where needed.
I made this for lunch today and hubby loved it!   Oh, I also just used my small panini grill to grill the peaches~too darn hot here to light up the grill mid-day!
