Muffin Recipe
Heat oven to 350. Grease and lightly flour muffin tin. Ingredients: 2 1/2 cups of flour, 1 cup of sugar, 1/2 cup of whole milk, 2 eggs, 2/3 cup of canola oil, 1/4 t. of ground nutmeg, 1/2 t. of salt, 1/2 t. baking soda, 1/2 t. of baking powder, 1 t. ground cinnamon, 1/2 c. chopped pecans, 1 1/2 cups of diced peaches, 3/4 cup of grated carrots. Stir ingredients together adding the peaches and carrots at the end. Gently fold all mixture together. Spoon the batter into greased muffin tins. Bake for 20-25 minutes until wooden toothpick comes out clean.Cool several minutes before serving and slicing.
