Spinach Salad ~


There comes a time during the holiday season when I tell myself "enough is enough...I can not eat any more food......I do not even want to think of food!" But then comes dinner-time and what's a person to do ? I decided to make this spinach salad thinking it would settle my food attitude down a notch. The fresh strawberries were very inviting , helping to stomp out any notion or desire for dessert. It was all I needed and what's more important, I felt good about what I ate.......so did the rest of the family!
2 Bunches of spinach , 1 pint of fresh strawberries, sliced thin.
Dressing
1 1/2 t. minced onion.
1/4 t. worcestershire sauce.
1/2 cup of oil, canola
1/4 cup of red wine vinegar
1/4 t.paprika
1 t. poppy seeds
2 T. of sesame seeds.
1/2 cup of splenda, sugar substitute
Salt and pepper to taste.
In a small container with a lid, add all dressing ingredients and shake well. Pour desired amount over spinach and toss slightly.

Oh if only I could get my husband to eat salad. This looks delightfully refreshing.

I saw beautiful strawberries in the market yesterday, and this salad would be perfect with them. Many years ago a neighbor made a spinach and strawberry salad for us, with blanched green beans and asparagus in it. Ever since then I've been hooked on fruit in salads.

Ahhhh, spring! I can have this salad in.... April, or May, or June.

So "holidaish" looking! I really enjoy fresh fruit in salads. It surely perks them up! And you are right, you just feel so healthy consuming them!
Where is your new business located? Anywhere between Florida and Ohio?

Spinach and strawberries - what a healthy combo! I love food that makes you feel good about eating it.

If only I could just eat salads all the time and feel full as well as virtuous!

This sounds wonderfully refreshing after lots of heavy holiday foods. I have to say, though, this first day back at work post-holidays, I think we were all missing the wonderful treats vendors had been plying us with for weeks.

oh my! I am also ready for salads at this time of year...and anything 'spinach' works for me! This salad looks delicious - and the dressing is very similar to a dressing my mother used to make when I was a child...I'd forgotten all about it as I've been in my French vinaigrette phase. Thanks for the lovely reminder. Bonne année from the south of France!
