Nuts about nuts!


A few days ago, I had an urge to bake something with macadamia nuts. I found a sight on Amazon where I could order them by the pound.......low and behold, they arrived today and the baking frenzy begins!

You are now viewing the box of ten pounds of raw, broken pieces of nuts, truly decadent and equally healthy. So, where does one begin cooking or baking?

Banana Macadamia Nut Bread

2 1/2 c. flour
1/4 c. of sugar
1/2 t. salt
3/4 c. of packed brown sugar
3 1/2 t. baking powder
1 1/2 t. Cinnamon
1 1/4 c. mashed bananas
1 t. vinegar
3 T. vegetable oil
1 egg
1 c. coarsely chopped macadamia nuts
1/3 c. milk

With mixer, blend all the ingredients together EXCEPT the macadamia nuts in a large bowl on medium speed. Mix three minutes or until everything is well blended. Add nuts and stir with spoon until incorporated into mixture. Pour into well greased 9x5 loaf pan. Bake at 350 degrees for 60-70 minutes . Easy!!!

So, I only have have 9 and 1/2 pounds to go! Will be busy roasting! Fortunately, the nuts can be frozen and remain in good shape for a year.

... bake something with macadamia nuts ... how very odd for a foodie such an urge and so sudden.
Bananas and macadamia seem like a perfect flavor combo.
Whatever will you do next with 9 and 1/2 pounds of macadamia nuts ... I look forward to the next.

my mom usually roasts them then freezes them. she also puts them into cookies, cakes and I like to put them into pesto. good luck!

You are off on a good start with your stash of macadamia nuts. I love banana bread: it's one of the first things I learned to make after moving to the US. Hope all is well with you.

simona~I really did not expect to receive the nuts as quickly as I did.....wanted to do some planning,however, there were three old looking bananas staring at me,begging to be used, so in they went to the bowl! I want to make some butter with the nuts and try my hand with some dukkah....one of my friends makes this and it is delicious! I have been in New Zealand for the past month, working on an olive estate.....fun! Trust you and hubby are well!

my kitchen~it was those damn bananas! I got the nuts to make dukkah,could not resist using the nuts as soon as they arrived..... and all the ingredients were right at hand! Love a fresh slice of nut bread in the morning. Usually save the macs for something special...my hand,then mouth!! Making butter tomorrow.....

There's no way you can ever have enough nuts. I had no idea you could order them from Amazon. It's amazing what a variety of things they carry. I keep my nuts in the freezer too.
